Meet our Farmers

We all want to know where our food comes from. We all want to have confidence in the provenance and integrity of the food we are eating.

We work exclusively with small, family-run farms in Dorset and Wiltshire that all produce ethically reared, nutritious meat, in a natural growing environment, in harmony with nature. Animals that have been allowed to grow at a natural pace and have not been rushed.

By shopping with The Dorset Meat Company, you are supporting small, family-run farms that have been an essential part of our rural economy down the ages.

We know our farmers

We all want to know where our food comes from. By showing you the small, local farms we work with, you will have the confidence in the integrity and origin of the meat you are eating. We know our farmers well and share their ethics and values. There is no trace of factory farming here: only small-scale family farms that use traditional methods of animal husbandry in a natural and biodiverse growing environment. Animals that have been allowed to grow at a natural pace and have not been rushed, resulting in better textured and highly flavoured meat.

We know our farmers

This is proper, regenerative farming, not industrialised meat production. Regenerative farming rejects pesticides and chemical fertilizers, instead strengthening the health and vitality of farm soil, increasing biodiversity, improving the water cycle, and increasing resilience to climate change. We We know our farmers well and share their ethics and their values: respect for their livestock and for nature, and a total commitment to the highest standards of animal welfare. We believe passionately that small-scale, sustainable farming is better for the animal, the local ecology, the farmer and for you, producing exceptional, ethically-reared meat you can trust completely

We are what we eat

Perversely, we would advocate that we all eat less meat, but when we do, we need to ensure it’s of the highest quality and is produced in a way that respects nature, the environment and the animal. Eating meat from animals that themselves have only eaten a natural diet of grass, wildflowers, clovers and legumes, rich in essential vitamins and minerals and untainted by growth promoters and chemicals makes a whole lot of sense. It’s a healthy choice to make.

I bought lamb and chicken supreme and am delighted with both.... the lamb steaks,, are more tender than the beef steaks I had previously! The chopped lamb makes a lovely Hotpot Have not tasted the chicken yet, but it looks divine!

Buy Grass Fed Beef

Eating meat from animals that themselves have only eaten a natural diet of grass, wildflowers, clovers and legumes, rich in essential vitamins and minerals and untainted by chemicals and pesticides, makes a whole lot of sense. It’s a healthy choice to make. Reputable studies have shown that grass fed beef has a better ratio of Omega 3 to Omega 6, is high in antioxidants such as vitamin E, and contains higher vitamin and mineral levels. Grain-fed animals that have shorter lives and are rushed to finish convert the carbohydrate to sugar and fat. Which is not good for us.

100% Grass Fed Beef

100% grass-fed animals that are reared in a natural, outdoor environment surrounded by bugs and germs, develop better immune systems and, because they are free to roam and therefore work their muscles more, produce less saturated fat. Which is, in turn, good for us. Livestock, be they cattle, pigs or chickens that are crowded into pens and never see sunlight, are more susceptible to disease that may require antibiotic intervention.

Why grass fed is Better for livestock

Grass has been the principal source of food for cattle and sheep for centuries and most cows eat grass at some point in their lives. However, the economics of industrial production have required large-scale farmers to grow and finish their animals faster which can only really be done through introducing high-energy livestock feed. Basically, cereals and soybean, much of it imported. If you think about it, slow-growing an animal naturally by only feeding them grasses and herbs, without bulking them up with grains, and allowing them to live outdoors, can only be a good thing. A naturally reared animal is less likely to get ill.

Why grass fed is Better for livestock

Cattle and sheep are ruminants. The word “ruminant” comes from the Latin ruminare, which means “to chew over again”. Ruminant animals have complex digestive systems that enable them to extract all the natural goodness from their diet of grass, wildflowers and clover free from pesticides and fertiliser. Clever stuff. But by giving a ruminant animal starchy, grain-based feed to hasten the growing process, we are interfering with mother nature.

Grass-fed beef & lamb is Better for biodiversity and the environment

Our beef and lamb eat only grass, wildflowers and clovers from pastures, or lays, that are free from the chemicals that impair and compromise soil fertility. A natural, permanent pastureland improves the structure and stability of the soil, whilst its deep roots extract the mineral goodness that lies deeper below. Pasturelands extract carbon dioxide from the atmosphere which nourishes the roots and helps with river systems by preventing soil erosion and run-off.

Sustainable Ethical Farming

Farming is as old as the hills but the way in which our food has been produced changed dramatically with the advent of mechanised, industrial farming. Industrialised food production has brought some pretty adverse consequences to our environment.

We are what we eat. Perversely, we would advocate eating less meat, but when we do, we need to ensure it’s of the highest quality and is produced in a way that respects nature, the environment and the animal.

Master Butchers

Our meat, sausages, and bacon are hand-prepared by our award-winning team of master butchers in the finest traditions of British craft butchery.

Our grass-fed meat is not only sourced from small, local farms with the highest standards of animal welfare, it is brought on by our team to produce really flavoursome, characterful meat.

All our meat is finished using non-halal processes.

Our beef is all dry-aged to tenderise and flavour the meat. By hanging a beef carcass on the bone in a chill store for 4 weeks or more, the meat ages naturally to lock in the great flavours you would expect from high-end beef, grass-fed beef. The process of dry-ageing enables moisture to evaporate and allows the beef’s natural enzymes to break down the meat’s tissues.

It’s a whole different ball-game to the wet-aged meat you will find predominantly in the supermarkets. With wet-ageing, the meat tenderises after it has been vacuum-packed and whilst it is being transported. Which is why you will notice wet-aged meat shrinking when you cook it as it can contain up to 30% water.

As they say, good things take time.

Packaging

So that your order arrives in tip-top condition, we prepare each order by hand so that it’s fresh, vacuum-pack each item and then pack it in a temperature controlled, fully recyclable chilled liner and double gauge cardboard box in order to ensure that the contents stay chilled for over 48 hours.

We use Recycle-Air chilled liners from our packaging partner Hydropac, a revolutionary recyclable temperature-controlled food packaging system that enables us to send your meat box overnight using the DHL national courier network with complete confidence.

The Recycle-Air system uses recyclable materials with a reflective white LDPE (Low-Density Polyethylene) layer on both sides and a double layer of bubble insulation sandwiched between the outer layers, giving a real emphasis on insulation and cushioning.

The Recycle-Air system has been tested and validated to ensure it meets current UK legislation.

Climate Chamber testing has proven that the Recycle-Air system will perform on a UK based ‘extreme’ peak summer temperature profile for more than 24hrs and 96hrs during winter testing (held between +2˚c to +8˚).
