Rack of Lamb with Herb Crust

Enjoy a delicious herb rack of lamb for a luxury supper, tender and succulent for two with our tried and much tested and loved recipe.


2 cloves of garlic

50G of mixed fresh herbs (parsley, rosemary)

Zest of 1 lemon

2 racks of lamb (for 4/6 people. 1 rack for 2/4 people)

Olive oil

2tbs Dijon mustard

75g breadcrumbs


Make the herb crust by peeling and finely chopping the garlic, herbs and lemon zest.  Add 2 to 3 large tablespoons of olive oil and the breadcrumbs and either put the ingredients in to a blender or prepare by hand in a mixing bowl.

Season the lamb racks well with salt and pepper, then drizzle with olive oil.

Heat a large frying pan on a high heat and brown the lamb racks for around 5-6 minutes one rack at a time (if cooking 2). Transfer the lamb to a plate and set aside to cool slightly.

Using the back of a spoon or a knife, spread the mustard evenly over the lamb racks.  Now spread the contents of the bowl over the mustard so it sticks in place.

Transfer the racks to a baking tray and bake for 15 to 20 minutes for medium rare, or a little longer, if you prefer your meat a bit more well done. Allow the lamb to sit for 5-10 minutes before carving the chops.

We like to serve our Rack of lamb with simple roasted crushed potatoes, garlic and rosemary.
