It’s all about that steak!
Could be a song but it’s not it’s just a fact. Steak recently polled at USATODAY.COM as the #1 favourite date night dinner meal.
Here’s our foolproof recipe to cooking the best steak of your life every time
Ingredients:
- 1 high-quality grass-fed T-bone steak, around 2cm thick
- Sea salt flakes
- Freshly ground black pepper
- 2-3 cloves of garlic
- Fresh rosemary
- Fresh thyme
- 50g unsalted butter
- Olive oil
- Optional: 150g cherry tomatoes on the vine
- Optional: 2 portions of fresh asparagus
Instructions:
- Preparation: Take the steak out of the refrigerator at least 30 minutes before cooking. It’s important that your steak is at room temperature to ensure even cooking.
- Season: Just before cooking, season both sides of your steak generously with sea salt flakes and freshly ground black pepper. This will not only season the meat but help to give it a delicious crust.
- Preheat: Preheat your oven to 190°C (fan-assisted) if you opt to include the cherry tomatoes and asparagus. Place these on a baking tray, drizzle with olive oil, and season with salt and pepper. Once the oven is hot, put them in to roast for 10-12 minutes, or until they’re cooked to your liking.
- Sear the Steak: Heat a heavy-based frying pan or griddle over high heat, and add a splash of olive oil. Once the oil is shimmering, carefully place your steak in the pan. Cook without turning for around 2-3 minutes until a golden-brown crust has formed. Flip the steak and cook for another 2-3 minutes on the other side for medium-rare. Adjust the timing to suit your preferred level of doneness: less time for rare, more time for well-done.
- Add Aromatics: Reduce the heat to medium, and add the butter, garlic (crushed with the side of your knife but not peeled), and sprigs of rosemary and thyme. As the butter melts, carefully tilt the pan and use a spoon to baste the steak with the buttery juices. Continue to baste for another 1-2 minutes, which will impart wonderful flavours into the steak.
- Rest: This step is crucial. Remove the steak from the pan and let it rest on a cutting board or warm plate for about 5 minutes. This allows the juices to redistribute throughout the steak, ensuring it’s moist and juicy.
- Serve: Slice the steak off the bone and then into strips if you prefer, or serve it whole for a more rustic presentation. Remove the roasted tomatoes and asparagus from the oven and arrange them alongside your steak.
- Enjoy: Serve immediately, and enjoy your restaurant-quality, home-cooked T-bone steak with your date!
This meal pairs wonderfully with a full-bodied red wine, such as a Shiraz or Malbec, and a simple side salad if you want something lighter than the roasted vegetables. Enjoy your date night!
