Our 4 year Aceto Balsamico from Modena, Italy is made in the traditional way using grape must (freshly crushed grape juice, skins, seeds and stems) and high quality white wine vinegar. The vinegar is aged in wooden barrels using the battery system that moves the Balsamico into smaller barrels each year. The barrels are not sealed so the vinegar looses 10% of volume each year during the hot Modena summer. This means the Balsamico becomes denser and more flavoursome.

Brush over roasting chicken or duck breasts, shake some over grilled tuna steaks, drizzle over tomato salads or stir a little into a roast vegetable pasta sauce.
