Rib eye steak, also known as scotch fillet or entrecote, comes off the rib and is ideal for fast cooking. If you’re a steak expert you’ll know Ribeye is the ‘Butcher’s Favourite’ steak. The sign of good quality ribeye is a characteristic marbling of fat that adds succulence and richness. We bring out its full, rich flavour by dry ageing it in our dedicated drying room for at least 28 days, allowing it to mature and develop.

Description

28 Day Dry Aged Rib Eye Steak Delivery

All our dry-aged, grass fed rib eye steaks are sourced from native breed cattle reared on small, family-run Dorset and Wiltshire farms that have been purely grass-fed on lush, natural pastures. Grass-fed beef has a better ratio of Omega 3 to Omega 6, is high in antioxidants such as vitamin E and contains higher vitamin and mineral levels. Eating meat from animals that themselves have only eaten a natural diet of grass, wildflowers, clovers and legumes, rich in essential vitamins and minerals and untainted by chemicals and pesticides, makes a whole lot of sense. It’s a healthy choice to make.

Our Red Rubys, Aberdeen Angus and Dexter breeds have been allowed to reach maturity at 30 to 36 months naturally, to produce beef that has outstanding depth of taste and texture with wonderful marbling. To lock in the great flavours you expect from high-end, grass-fed beef, our ribeye steak is dry-aged for at least 28 days and prepared using the finest traditions of British craft butchery.

We believe strongly that small-scale farming is better for the farmer, the animal, the local ecology, and for you, producing exceptionally tasting, ethically reared meat that you can trust completely.

What is beef ribeye steak?

Ribeye steaks are sometimes called beauty steaks, and anyone who tries it will agree that the taste really is as attractive to the palate as any meat cut around. Tender, juicy and very flavourful, this popular beef option contains just the right amount of fat, and it can be cooked quickly and efficiently on high heat for the most mouth-watering results.

Ribeye steaks vary as they can be boneless or bone-in, so some steaks contain a piece of rib bone that can extend beyond the muscle or be trimmed to align with the meat. Sometimes, bone-in ribeye steak is labelled as rib steak.

It’s a matter of personal preference whether you choose to cook with a bone-in or boneless beef ribeye. The bone can add flavour and moisture to the meat, but it can also require you to think more carefully about how you plan to cook it. The meat nearer the bone cooks more slowly, so it can be difficult to get an even finish across the whole cut. Boneless ribeye steaks tend to be the most common.

How to enjoy best steak ribeye

The main muscle you’ll find in a steak ribeye is the longissimus dorsi, which is a long and tender muscle that runs from the cow’s hip bone to the shoulder blade. This muscle is tender because it doesn’t work as hard as many other muscles in the animal, and it contains a high amount of intramuscular fat.

Known as marbling, this fat can add a welcome dose of flavour and moisture to your steak. It’s also the primary muscle found in strip steaks, and there is another strip of muscle at the top of the steak called the spinalis dorsi or rib-eye cap.

For the best results when cooking your ribeye steak, be sure to let it breathe at room temperature rather than cooking it straight from the fridge. You should also season it generously before cooking, and sear it in a very hot pain for a few minutes to brown it off and seal in the moisture. The length of time to cook your ribeye depends on how you like your steak.
