You should then preheat your oven to 200 degrees C for fan ovens or 215 degrees C for conventional ovens. While you wait, use a heavy-based pan and splash a tiny amount of vegetable oil in there. Get both the pan and the oil really hot on the stove before adding the meat, then add your steak filly and colour on all surface areas on intense hear for 3 to 4 minutes.
Next, place your steak in a hot tray in the centre of the oven and roast for 6 to 8 minutes. Aim to reach a core temperature of minimum 56°C to achieve a medium rare finish.
