Wild rabbit is one of the tastiest and leanest game meats there is. It’s also really abundant so it’s available all year round.
Cook it carefully due to its leanness in a casserole, in white wine, stock, lots of garlic, and a touch of cream and Dijon mustard to finish.
We like to marinate ours overnight in olive oil, garlic, rosemary, bay leaves, white wine and lemon juice, then fry gently with a dusting of flour, some stock, adding anchovies and capers as an optional extra.

Our whole wild rabbit is sourced from local Dorset estates and game dealers and hung for a short period of time.

Rabbit was once a British staple but has fallen away in popularity with the ascent of industrially produced foods. Rabbit is a meaty joint, very lean, low in fat and nutritious.

We have been purchasing our meat from The Dorset Meat Company for about a year. The quality including taste is what keeps us coming back. We moved recently and ended up back in the supermarket for a few weeks, a great reminder as to why we use The Dorset Meat Company. Our delivery arrived Friday and our steak last night was superb. I would try to compare it but you really can't it's just completely different and delicious. Try them you won't go back. Service and choice are great and quality is simply best I have ever bought. Wow.....What an amazingly well run company. On the lookout for well bred, grass fed meat as we have decided, as a family to eat well, eat with a conscience but above all go back to basics with excellent quality food that is a pleasure to cook. From ordering online and having all my questions answered with regard to animal welfare, to helping me choose the best produce, this company is 5 *****..... Having Ox tail tomorrow, slow cooked, it will fill the house with a beautiful aroma, and of course will taste delish.
We have been looking for responsibly sourced meat for some time and have finally found the" real deal"at The Dorset Meat Company. Fantastic organic produce, delivered to my front door and the quality is outstanding. No shrinkage of chicken breasts after cooking, amazing smoked bacon and the cheeses from the deli section are spectacular. Also recommended us to Goldhill Organics for veg which again has been a revelation. Try it once and you like us will be converted. Great job.
Always enjoy the meat from The Dorset Meat Company. We are trying to cut back on meat consumption so I want to know we are going to get some quality meat. We ordered a wonderful piece of beef for Christmas Day. Slow cooked. It went down a treat at the table with 0 waste. Delicious. Still got my tasty sausages in the freezer.
