Wild rabbit is one of the tastiest and leanest game meats there is. It’s also really abundant so it’s available all year round.
Cook it carefully due to its leanness in a casserole or with cream, shallots, white wine and a touch of Dijon mustard. We like to marinate our overnight in olive oil, garlic, rosemary, bay leaves, white wine and lemon juice. Fry them gently in flour, transfer to a casserole dish adding onion and celery, some more white wine and cook in the oven for 45 minutes, or until the rabbit is tender. You can add anchovies and capers as an optional extra.

Our whole wild rabbit is sourced from local Dorset estates and game dealers and hung for a short period of time.

Rabbit was once a British staple but has fallen away in popularity with the ascent of industrially produced foods. Rabbit is a meaty joint, very lean, low in fat and nutritious.
