Chimmichurri

Ingredients

• 50g fresh parsley, finely chopped
• 4 cloves of garlic, peeled and grated, or very finely chopped
• 1 small red chilli, deseeded and finely chopped
• 1 tablespoon fresh oregano (or 1 teaspoon dried oregano)
• 1 tbsp sweet smoked paprika
• 200ml olive or rapeseed oil
• 100ml red wine vinegar
• 1 level teaspoon sea salt
• A pinch of pepper
• Juice of ½ a lemon, squeezed
