Chilli Jackets

Method

1. Cook your jacket potatoes to preference until the skins are lovely an crisp. We like to microwave them for 5 minutes each, than place in an oven at 180°C until the skin is brown, and the potato is soft inside when skewered with a knife for a lovely natural buttery soft texture.
2. Warm your chilli through.
3. Cut a cross in the top of each potato, and squeeze with 4 fingers and thumbs to create a pocket. Load this with plenty of chilli. Top with a good dollop of crème fraiche, grate the lime zest over the top, then add a good squeeze. The lime really does make all the difference!
4. Break up and sprinkle the tortillas on top, then add a sprinkle of coriander, and devour immediately!
