Beef Wellington is a timeless classic of British cuisine and an elegant centrepiece rich in flavour.

Our Beef Wellington is wrapped in prosciutto with a rich, earthy mushroom duxelles and pork liver pate, finished with a light, latticed pastry casing.

Our new and larger Beef Wellingtons have been prepared by September House using grass-fed, centre-cut West Country beef fillet. September House is a family-run smallholding and farmhouse kitchen owned by Bruce and Harriet Martin nestled in the Wiltshire countryside on the edge of the Longleat Estate. September House are dedicated to producing high-welfare artisinal products that embrace ethical farming practices, regenerate the soil and encourage biodiversity and  sustainability.

Cooking instructions:

Take out of the fridge and leave out for 20 minutes to allow the Beef Wellington to come to room temperature.

Pre-heat your oven to 180 degrees centigrade (fan assisted) and place the Beef Wellington on a lined baking tray until the pastry is crisp and golden in line with the following cooking guide:

600g (rare: 30 to 32 minutes, medium : 40 to 42 minutes) : 1.2kg (rare: 45 to 50 minutes, medium : 65 to 70 minutes).

Subject to any egg allergy, we recommend taking 1 egg, beating well with a fork, and using a pastry brush to cover the Wellington prior to cooking.

Remove from the oven and rest for 10 minutes, slice with a bread or serrated knife.

We like to pair ours with a Gratin Dauphinoise and French beans.

We suggest that the 600g portion will feed 2 people and the 1.2kg portion will feed 4 people.

Our Beef Wellington will have previously been frozen and will arrive thawed or partially thawed.

Ensure the product is thoroughly defrosted before cooking. Place in a fridge and use within 2 to 3 days of delivery.

Prepared on surfaces that may have traces of milk, egg, wheat, soya, mustard, fish, crustaceans,  nuts and sesame.

Do not refreeze.

So that your order arrives in tip-top condition, we prepare each order by hand so that it’s fresh, vacuum pack each item and then pack it in a temperature controlled fully recyclable chilled liner to ensure that the contents stay chilled for over 48 hours.
