Rabbit meat is one of the tastiest and leanest there is and is available all year round.
Cook it carefully due to its leanness in a casserole, in white wine, stock, lots of garlic, and a touch of cream and Dijon mustard to finish.
We like to marinate ours overnight in olive oil, garlic, rosemary, bay leaves, white wine and lemon juice, then fry gently with a dusting of flour, some stock, adding anchovies and capers as an optional extra.

Our whole farmed rabbits are plumper and more tender than wild rabbit and are sourced from France.
Rabbit was once a British staple but has fallen away in popularity with the ascent of industrially produced foods. Rabbit is a meaty joint, very lean, low in fat and nutritious.

So that your order arrives in tip-top condition, we prepare each order by hand so that it’s fresh, vacuum pack each item and then pack it in a temperature controlled fully recyclable chilled liner to ensure that the contents stay chilled for over 48 hours.
