Chicken, Chorizo and Prawn Jambalaya Recipe

Method

1. Coat the chicken pieces in your Cajun mix, and set aside. Meanwhile, fry the chorizo slices until crisp, then add the onions and cook until soft, then add the peppers, and sauté until crisp, but not soft. Add the garlic for the last minute.
2. Remove from the pan and set aside.
3. Prepare your rice in lightly salted boiling water. Cook until almost cooked, on the firmer side of al dente. Drain and rinse.
4. Fry the chicken, until cooked through. Once cooked, add the prawns, and cook until pink right through. Add the chorizo, onions and peppers, mix well, then stir in the rice. And coat well. The rice should change colour.
5. Add the stock, and cover, simmering gently and stirring until the stock is absorbed and the rice is fully cooked. Top with a squeeze of lemon and Serve immediately.
