Our haunch of wild, boneless venison is best roasted slowly to release its deep, gamey, flavour and is a great choice for a Sunday roast.
Lean and low in saturated fat, our wild venison is prepared by our master butchers and sourced from professional stalkers who manage a combined area of 14,000 acres of rolling Dorset arable farmland, pasture and woodland.
We like to roast ours, seared first, with red wine and stock added to the roasting dish and topped with a few rashers of streaky bacon. Serve with a celeriac mash and seasonal veg.

At the Dorset Meat Company, we work with 20 small, family-run farms in Dorset and Wiltshire that all work to produce ethically reared, nutritious meat, in a natural growing environment, in harmony with nature. Animals that have been allowed to grow at a natural pace and have not been rushed.
Our haunch of wild venison is naturally reared on Dorset lowlands and strictly sourced from professional stalkers who manage a combined area of 14,000 acres of rolling Dorset arable farmland, pasture and woodland.
Wild deer eat a natural diet of grass, fruits and berries, acorns, apples and chestnuts which produces venison meat that is very lean and low in saturated fat.
Our wild venison is hung on the bone for up to 10 days to let it develop a really intense flavour and then hand-prepared by our master butchers.
