Low in fat, high in protein, stacked with vitamins and iron, venison is a very lean meat. The Dorset Meat Company’s wild venison is available in our meat boxes and reared on Dorset lowlands, strictly sourced from professional stalkers who manage a combined area of 14,000 acres of rolling Dorset arable farmland, pasture and woodland.
Wild deer eat a natural diet of grass, fruits and berries, acorns, apples and chestnuts which produces venison meat that is very lean and low in saturated fat.Our wild venison meat is hung on the bone for up to 10 days to let it develop a really intense flavour and then hand-prepared by our master butchers.
Venison has a slightly finer grain than beef and shouldn’t be too gamey. Venison is very lean, so either cook it fast and high, or add extra fat (belly pork, bacon, butter, duck fat) to keep it moist.
Why is venison good for me?
It has more protein than any other red meat, which means that it sates the appetite really well. It is also particularly rich in iron (more so than beef), which prevents anaemia and is good for energy levels. It’s full of B vitamins: B2 (riboflavin) and B3 (niacin), which help regulate metabolism; and vitamin B6 and B12, which may lower homocysteine build-up in the blood, thus lowering the risk of heart attacks and strokes. Thanks to all the wild and pasture food that deer eat, the small amount of fat in venison is likely to contain high levels of conjugated linoleic acid (CLA), which is thought to protect against heart disease and cancer. Three ounces of lean beef contain 15 grams of total fat. Three ounces of venison contain only 3 grams of total fat. Most importantly, venison contains about one sixth the amount of saturated fat that beef does.
